Superbowl Sunday is one of those rare days when regardless of interest in the actual event itself, everyone just wants to be with friends and have a good time. Superbowl Sunday should really come around more than once a year, shouldn’t it?

As you may have seen last week in our post on University Chic, we put together a foolproof party-in-a-box plan that guarantees said good time! We’ve got a few great treats to serve, some themed drinks, and a game to play during the commercials that YAY! DIY friend Grace debuted at her Superbowl party last year.

This week, we’ll expand on our ideas from University Chic so that no matter if you’re rooting for Peyton and the Colts, Drew and the Saints, or are really don’t care either way, you’ll still be covered.

We’ll start today with the most important part of any soiree — football-centric or otherwise – the food! Here are our takes on a few recipes that will have your guests double-dipping those chips:

Easy Bake Spinach Dip

Spinach Dip Ingredients

What you’ll need (Serves four):
- Two packages frozen Spinach
- Two packages grated cheddar
- Two packages of grated mozzarella
- One package of cream cheese
- Baking pan or tin

Optional:
- Artichoke hearts
- Pepper
- Parmesan cheese

Connoisseurs of spinach dip (such as ourselves) know that a good one need not be fancy in its ingredients. Feel free to get the cheap stuff here! (However, to make up for the lack of natural flavors in the cheap stuff, feel free to add additional spices like pepper to spice things up.) No matter what brands you buy, the mix of the cheeses combined will turn out delicious.

How to make it:

Step 1: Defrost your spinach in the microwave and pre-heat your oven to 350 degrees.

Step 2: When all of the ice is gone, simply layer spinach, mozzarella, cheddar and spoonfuls of cream cheese until your pan is full. You want to use all of the spinach – but it’s okay if you don’t use all of the cheese. If you want to add artichoke hearts or a dash of pepper here and there for a stronger flavor, layer those in too.)

Step 3: When the pan is full, sprinkle some parmesan cheese on top.

Ready for its closeup...and the oven.

Step 4: Place it in the oven for 20 minutes — until the parmesan is slightly brown if you’re going sans parm, is bubbly. Take fork and mix. Add some more parmesan if you want a golden crust, and bake for ten more minutes.

Step 5: When the parmesan is brown again (or when your top is bubbly again) – you’re done!

This is best served warm — with chips or pita!

Microwave Friendly Chili-Rotel Con Queso

This dip combines two Velveeta favorites to make one delicious dip.  Best part? It takes a total of 10 minutes. Tops.

The ingredients....

Ingredients:

16 oz. Velveeta Cheese

½ Can Hormel Chili

1 can Ro*tel tomatoes (or 1 can chopped tomatoes with Green Chilies)

Step 1: Cut Velveeta into small pieces, microwave on high 2 ½ minutes, stir.

Step 2: Add tomatoes (with juice) and ½ can chili

Delicious!

Step 3: Microwave until melted, about 2-4 minutes.  Serve with Tostitos or Fritos.
